Tom Collins
INGREDIENTS
  • 2 oz gin
  • 1 oz fresh lemon juice
  • ½ oz simple syrup
  • 3 oz chilled club soda
  • Garnish:  Lemon slice
  • Garnish:  Maraschino cherry

INSTRUCTIONS
Pour the gin, lemon juice, and simple syrup into an ice-filled collins glass. Top with club soda and stir gently. Garnish with the lemon slice and cherry.

VARIATIONS: For a Tex Collins, substitute 3 ounces fresh grapefruit juice and 1 tablespoon honey for the lemon juice and sugar syrup. For a Raspberry Collins, add 3/4 ounce crème de framboise and 3 ounces raspberry purée, and garnish with a few raspberries.

NOTES
The epitome of 1950s suburbia, this classic drink was actually created in the mid-1800s by John Collins, barman at Limmer's Hotel in London, as a variation on his Holland gin-based John Collins cocktail. The original drink was named after the slightly sweet Old Tom gin, as opposed to the later version made with London dry gin, which became much more popular, catching on here after World War I vets brought it back home to America.
