Pineapple-Infused Rum
INGREDIENTS
  • 1 whole fresh pineapple
  • One 750ml bottle good quality light rum

INSTRUCTIONS
With a sharp knife, peel off the rind and core the pineapple.  Cut the pineapple into small cubes.  Place the cubded pineapple in a large glass container, add the rum, and cap tightly.  Let stand at room temperature for 1 week, shaking fently every couple of days.  Refrigerate the mixure for another week, shaking it gently every couple of days.  Taste for the preferred flavor intensity, steeping for another week if it needs more time.  Strain the mixture into the original bottle.  Cap tightly, label, and refrigerate until ready to serve.
